Zucchini Cakes…Ingredients: 1 large zucchini, grated 1 large egg or egg substitute 1 c. panko bread crumbs Salt and pepper to taste 1 tbsp. Adobo spices 1/2 c. Parmesan cheese, grated or cheese substituteDirections: Remove excess liquid from freshly grated zucchini by placing them between paper towels and squeezing. In a large bowl, combine all the ingredients. Mix thoroughly. Heat a large pan on medium, and spray with Pam. Shape spoonfuls of the zucchini batter into 2-in. (diameter) patties, and drop onto the sizzling pan. Cook each side for about a minute and a half, or until the outside is golden brown. Finish the cakes off in the oven. Stick them on a baking pan and broil them for 1-2 minutes. Serve hot, alone or with light ranch dressing.

Spinach Avocado Grilled Cheese…Ingredients: 2 slices whole grain bread 2-3 tablespoons Pesto 2 slices mozzarella or cheese substitute handful fresh baby spinach ¼ avocado, sliced 2 tablespoons goat cheese, crumbled or cheese substitute olive oil Directions: Spread about 1 tablespoon Pesto onto each slice of bread (2 tablespoons total. On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently. Heat 1 tablespoon olive oil in a frying pan over medium low heat. Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown. Cut in half and Enjoy
